PURPOSE:To obtain a dried oyster, excellent in taste and sanitation and useful as a material for sauces, soups, foods boiled down in soy, etc., by heat-treating the surface of a shucked raw oyster with an aqueous solution of ethyl alcohol at a high temperature and then drying the heat-treated oyster. CONSTITUTION:The surface of a shucked raw oyster is heat-treated with an aqueous solution of ethyl alcohol at 70-100 deg.C liquid temperature and subsequently heated and dried at 70-100 deg.C by stepwise heating in each step of 10 deg.C. Thereby, the objective dried oyster is obtained. The resultant dried oyster is then preferably crushed into a granular or powdery form. |
