PURPOSE:To stabilize the quality of the rice cooking objects having a water absorbing rate which is mutually different by the kind and characteristic or the like of corns, by varying a secondary dipping time based on the water content value of the corns at the time of primary dipping and the objective water content value of the rice cooking objects. CONSTITUTION:A dipping device 4 (secondary dipping) can contain rice carried by a conveyor 7, and is provided with a storage water tank 10 for storing a specified quantity of high warmed water having the water temperature of about 85 deg.C via a water heater, and a carrier 11 for enabling the rice fed into the storage water tank, to be carried to the side of a secondary steaming device 5. From rice fed into a containing tank 2, to be previously dipping-processed, a part of sample rice is taken out and water content is measured with a water content meter (resistance type, electrostatic capacity type, or the like, for example). On the basis of a water content value and the objective water content value of finished rice, a time for dipping with the high warmed water of the dipping processor 11 after primary steaming is received is regulated. |
