A machine for removal of both rind and skin from meat and fish. A cutting blade under load from the food being processed moves automatically against the force of a main spring into a working position defined by an end stop. The knife holder is connected to a lever arm forming part of an adjusting lever arrangement onto which the main spring applies a load. The knife holder is also connected to a sliding guide located on the cutting edge side of the knifeholder and running parallel to a tangent to the upper crown of the conveyor roller. A second spring acting on a crank governing the slide movement, presses the knife towards the conveyor roller surface. Switching from rind to skin removal is effected by a mechanism which limits main spring travel and forces the knife holder against the fixed end stop. USE/ADVANTAGE - The machine removes both rind and skin from meat and fish, automatically adapts to rind thickness and yet carefully removes the skin.
