The subject of the invention is a process for preparing crisp potato slices, in which the previously peeled potatoes are cut into slices, the slices undergo a first washing, the slices are steeped in an osmotic bath formed by a solution containing particulary agents stabilising the crispness and the colour of the slices, the slices undergo a second washing, the slices are swept with air to remove surface water, the slices are fried, the fried slices are drained and the said slices thus prepared are packaged. |
