A capsule, esp. an edible capsule, is produced from a droplet which comprises at least a coating of a liq. which can be solidified, the droplet being allowed to fall into a bath of liq. hardener of which the top surface has been foamed to a substantial depth on top of the surface of the liq. e.g. a depth of 2 to 25 mm, pref. between 2 and 10 mm. The droplet is pref. produced by simultaneous extrusion from coaxial nozzles to form a centre, which may be flavoured, encapsulated in a covering which hardens when it enters the hardener. The process is used for the prodn. of encapsulated prods., e.g. edible prods., in partic. simulated fruits comprising a soln. or suspension with a base of fruit pulp or puree, extruded as the interior of a droplet having an alginate casing. The foam cushion on top of the liq. hardener surface reduces the shock to the droplet as its fall is arrested; and there is less tendency for the casing to be displaced or the capsule deformed. |
