摘要 The invention relates to dry granules which can be swollen in hot water for preparing bread dumplings by introducing water-permeable bags which are filled with the granules (and, where appropriate, other dry products) or the like into hot or boiling water, where a dough mixture is prepared from flour and conventional bread additives as well as water and conventional ingredients and is baked to bread and the latter is granulated by cutting, where appropriate dried, coated in a conventional way and finally dried to a moisture content <10%, which is distinguished in that it consists as main component 1 of bread composed of a mixture of wheat flour type 405 to 1050 in an amount of 50 to 100% by weight and rye flour type 815 to 1370 in an amount of 0 to 50% by weight, in particular 15 to 40% by weight, and as main component II of oil seeds, cereals and cereals products excluding the flours defined in main component I, as well as spices, it also being possible to employ main component II in the presence of flour(s) in the form of a special bread, where the dietary fibre content measured by the method of M. Elchazly and B. Thomas is at least 2.5% by weight of the dry weight of I+II, and where the constituents of main component II can be baked with the flours of main component I to give a special bread which contains both components, and to the process for the production thereof.
