PURPOSE:To prepare a juice not oxidized and reduced in the discoloration and deterioration thereof by passing fruits through a maximum ice crystal- producing zone, thawing the frozen fruits and subsequently pressing the thawed fruits. CONSTITUTION:Fruits are passed through a maximum ice crystal-producing zone to freeze the fruits, and the fruits are thawed at a temperature of >=0 deg.C and subsequently pressed to prepare a juice. |
