PURPOSE:To safely obtain bleached herring roe with a beautiful color tone at a low cost without using hydrogen peroxide by oxidizing bled herring roe with oxygens or peracids or salts thereof and then bleaching the oxidized herring roe with a reducing agent. CONSTITUTION:Bled herring roe is oxidized with oxygens such as air, oxygen or ozone or peracids or salts thereof, e.g. a percarbonate, hypochlorite or perborate and then bleached with a reducing agent such as a sulfite, hyposulfite or pyrosulfite. |
