PURPOSE:To produce a soft meat processed food such as canned food, bottled food or retort food having juicy feeling and preferable texture by injecting pickles consisting of common salt, red algae, water, etc., into a raw material meat and then heating and cooking the meat. CONSTITUTION:When a meat processed food such as canned food, bottled food or retort food using a meat as a main raw material is produced according to ordinary method, water is added to common salt, e.g. of 1-10pts.wt., red algae extract such as carrageenan, e.g. of 0.3-5pts.wt. and as necessary gums such as Locust bean gum or xanthane gum, e.g. of 0-5pts.wt. to provide 100pts. wt. pickles and the pickles are injected into the raw material meat before heating and cooking. |
