PURPOSE:To obtain the subject transferred saccharide useful for drink, etc., having bifidus-propagating action and fat accumulation-inhibiting property by using a specific thermophilic bacterium belonging to genus Bacillus and producing sucrose transferase. CONSTITUTION:Thermophilic bacterium belonging to genus Bacillus and producing sucrose transferase is used, preferably sucrose and/or maltose is affected on an air-diffusible membrane charged with said bacterium to afford the objective sucrose transferase, preferably isomaltosyl fructoside or isomelezitose. Besides, a bacterium having >=65 deg.C growing temperature, e.g. FERM BP-2927 is preferably used as said bacterium. |
