PURPOSE:To obtain the subject food, containing a compound derived from hemoglobin containing hemoferrum and MISO (fermented soybean paste), and capable of eliminating bitterness, grassy smell and metallic taste derived from the aforementioned compound and effective in enriching iron. CONSTITUTION:The objective food is obtained by mixing 1 pt.wt. compound (a decomposition product of hemoglobin with an enzyme containing 0.5-5 pts.wt. iron) derived from hemoglobin-containing hemoferrum with preferably >=49 pts.wt.
