PURPOSE:To produce a hetero-branched cyclodextrin by reacting an alpha-galactosyl group transferase to an aqueous solution or suspension containing maltosyl-alpha-, beta- and gamma-cyclodextrin and alpha-galactosylsaccharide compound. CONSTITUTION:A hetero-branched cyclodextrin (CD) having one or two galactosyl groups bonded to side chain of a branched CD through alpha-bond can be produced by reacting an alpha-galactosyl group transferase to an aqueous solution or suspension containing (A) cyclodextrins selected from (A2) a hetero-branched CD having one or two galactosyl groups bonded by transfer bonding through alpha-bond to any hydroxyl groups at C2, C3, C4 and C6 positions of galactosyl groups on the side chain of a G1-alpha-,beta- and gamma-CD, (A2) a hetero-branched CD having one or two galactosyl groups bonded by transfer bonding through alpha-bond to any hydroxyl groups at C2, C3, C4 and C6 positions of any galactosyl groups of a maltosyl group on the side chain of a C2-alpha-, beta- and gamma-cyclodextrin, (A3) G1-alpha-, beta- and gamma--CD and (A4) a maltosyl-alpha-,beta- and gamma-CD and (B) an alpha-galactosyl- saccharide compound. |
