PURPOSE:To isolate only glucuronic acid having a specific bonding by utilizing a substrate specificity hydrolyzing a specific glycoside bonding and not affecting to other specific glycoside bonding. CONSTITUTION:A Cryptococcus magnus MG-27 (FERM P-11092) is cultured in a medium containing natural substance of glucuronic acid residue such as glycyrrhizin as an introducing substance to produce beta-glucuronidase. Said beta- glucuronidase has a substrate specificity hydrolyzing glycoside bonding between glucuronic acids in 2-O-beta-glucuronosyl glucuronic acid residue and not affecting to glycoside bonding in phenolphthalein-beta-D-glucuronide. Thus, beta-glucuronidase is affected to glycyrrhizin in utilizing said action to produce glycyrrhetinic acid monoglucuronide as a sweetener having high sweetness. Thereby, a sweetener having high quality is able to be produced in high yield and a low cost. |
