NEW MATERIAL:Hetero-branched cyclodextrins having a structure in which 1-2 galactosyl groups are transferred and bonded to the 4-OH of the side chain glucosyl group of glucosyl-beta-cyclodextrin through beta-bond. USE:Useful in the fields of medicines, foods and cosmetics. PREPARATION:beta-Galactosyltraferase is acted on an aqueous solution or suspension containing glucosyl-alpha,beta and gamma-cyclodextrin, maltosyl alpha,beta and gamma-dextrin and a beta-galactosyl saccharide compound.
