PURPOSE:To obtain the title seasoning solution having good fragrance at reduced cost of installation for a shortened fermentation time, by blending specific plural kinds of immobilized yeast, packing into a reactor container, passing a fermentation stock solution through the container, and subjecting to alcohol fermentation. CONSTITUTION:Immobilized yeast prepared by immobilizing main fermentation yeast to granular ceramic as soy sauce yeast is blended with immobilized yeast obtained by immobilizing after-aging yeast to granular ceramic in a weight ratio of 95:5-50:50, packed into a reactor container, a fermentation stock solution is passed through the reactor container and subjected to alcohol fermentation to give the objective seasoning solution. |
