PURPOSE:To obtain the title improver containing a mixture of sodium hydrocarbonate, calcium citrate, calcium lactate and milk protein as an active ingredient and improving L value in elasticity and simultaneously improved in separation, etc. CONSTITUTION:The aimed improver containing a mixture of 1 pts.wt. sodium hydrocarbonate, 0.1-3 pts.wt. calcium citrate, 0.1-3 pts.wt. calcium lactate and 1-100 pts.wt. milk protein and/or soybean protein as an active ingredient. Furthermore, the improver is preferably added to fish meat at an amount of 0.1-9 pts.wt. based on 100 pts.wt. fish meat during production process of marine kneaded product. |
