PURPOSE:To obtain the title salted salmon roe capable of preventing hardening of egg membrane and readily carrying out cleaning and selection of egg grains and having excellent quality by dipping egg grains immediately after separation and cleaning the egg grains and then immediately salting the treated egg grains with a saturated common salt water. CONSTITUTION:Egg grains immediately after taking out raw material fish eggs from a fish body, treating the fish eggs with a fish egg separator and separating fish egg grains are dipped into an ion-containing water controlled to pH4.0-7.0 and cleaned and then immediately salted with a saturated common salt water and stirred to provide the aimed salted salmon roe. Furthermore, the ion-containing water is preferably controlled to pH4.0-7.0 produced on anode side by electrolytic dissociation and electric permeation action produced from equipment used.
