An automatic poultry carcase cutter has a stepping conveyor chain with hooks suspending the carcases by their legs, a detector measururing the weight and/or volume of each carcass as it passes, cutters downstream fo the detector removing wings and legs from positions determined by data transmitted from the detector, and conveyors removing the wings, legs, and carcases from beneath the cutters.
