PURPOSE:To obtain a bacterium-controlling agent having a high economical effect as keeping the effect for a long time by adding polylysine (salt), middle or lower fatty ester and a basic protein having anti-bacterial properties to anhydrous or water-containing ethanol. CONSTITUTION:Anhydrous ethanol or water-containing ethanol having >=30wt.% concentration is mixed with respectively at least a species of (A) polylysine or salt of the polylysine (preferably epsilon-polylysine), (B) middle or lower fatty ester of (di)glycerin (preferably monoester of caprylic acid or caproic acid) and (C) a basic protein (e.g. protamine) having anti-bacterial properties, or respectively a species of the group A and the group C (adding amounts are respectively 0.01-10wt.% of each group) to produce the subject bacterium- controlling agent. The environment to be an object of the bacterium- controlling is a preparing machine, a preparing factory and a cooking room, etc., of aquatic processing products, etc. Using time of the agent may be reduced and therefore, scattering of excess alcohol in the environment is able to be avoided. |
