NEW MATERIAL:Lactitol crystal having three molecule water of hydration based on one molecule lactitol. USE:Useful as a new foodstuff having a low sweetness and a low calorie and free from causing decayed tooth. In heating at >= the melting point, 53-55 deg.C, the crystal is converted to an aqueous solution having 86wt.% concentration and a solid crystalline composition can be obtained by cooling the resultant aqueous solution to about 20 deg.C, adding a tri-hydrated crystal seed to the cooled solution and stirring the solution. PREPARATION:An aqueous hot solution of lactitol is gradually cooled taking a good long time to precipitate a crystal. The precipitated crystal is collected by filtration, centrifugation, etc. |
