<p>47 kD and 31 kD proteins, and their 67 kD expression precursor, believed to be the source of peptide flavour precursors in cocoa (Theobroma cacao) have been identified. Genes coding for them have been probed, identified and sequenced, and recombinant proteins have been synthesised.</p> |
