The invention relates to a method for producing, on an industrial scale, a thickener for soups and potages. The finished product has a granular appearance, is green in colour and is made up of pieces of dry wheat having dimensions of between 0.5 and 3 mm. This product is obtained from ears of wheat harvested before they have ripened, when they are still green. These ears are then dried artificially by a current of warm air, then shelled; the grains extracted are crushed and the flour is removed by means of sieving in order to obtain the desired product. This method is of interest to the agri-foodstuff industry concerned with food for human consumption.
