PURPOSE:To destroy thermostable microorganisms and to excellently preserve a food by adding a pH adjuster to the food, adjusting the food to an acid side, putting in a container and applying high pressure to the food with an aqueous pressure medium. CONSTITUTION:A food is blended with a pH adjuster (preferably organic acid) and preferably a food preservative (preferably glycine, monoglyceride or lysozyme) and adjusted to an acidic side of preferably pH<=5.5. The food is stored in a container and subjected to high-pressure treatment (preferably under >=500kg/cm<2> for >=5 minutes) by an aqueous pressure medium to sterilize and preserve the food. |
