In oil-in-water emulsions comprising a discontinuous oil-phase and a continuous aq. phase, the continuous aq. phase contains a combination of hydro-colloids consisting of: (A) a water-soluble nonionic cellulose ether and (B) a crosslinked acrylic acid polymer or -copolymer having average mol.wt. 1000000-5000000, present as a water-soluble salt. The wt. ratio (A):(B) is 9:1 to 1:9 (1:3 to 3:1). The total amt. of hydro-colloids is 0.2-2 (0.3-1) wt.% w.r.t. the emulsion. Pref. the cellulose ether is a hydroxypropyl- or a methyl hydroxypropyl-cellulose. More specifically the wt. ratio of the discontinuous oil-phase and the continuous water-phase is 1:9 to 4:6.
