PURPOSE:To obtain a multi-layer jelly with sharp boundary planes by laminating a yogurt jelly gelled with a thermo-irreversible gelling agent with a thermo- reversible gelling agent-contg. jelly material in a sol state followed by cooling. CONSTITUTION:Firstly, a yogurt jelly is produced by homogeneously mixing (A) a thermo-irreversible gelling agent such as glucomannan or beta-1,3-glucan with (B) yogurt and by subjecting the mixture to at least one process selected from heating or refrigeration, cooling, standing as it is, and pH adjustment. Thence, the resulting yogurt jelly is laminated with, in a sol state, another jelly material containing a thermo-reversible gelling agent such as agar-agar or carrageenan, followed by cooling. |
