PURPOSE:To subject boiled eggs to vacuum deep drawing packaging by pressurizing boiled eggs such as hen's eggs in water or seasoning solution at 10-60 deg.C under given pressure using a flat plate or a mold to transform the boiled eggs into a desired shape. CONSTITUTION:Boiled eggs such as quail eggs, hen's eggs or eggs of bird similar to quail or chicken are pressurized in warm water or seasoning solution at 10-60 deg.C by using a flat plate or a mold. Degree of pressurizing is preferably 0.2mm-1.0mm/hr as amount of transformation per hour. After the transformation, the eggs are immersed in a second seasoning solution, smoked and lightly dried but the eggs are stable. The eggs can be packaged individually for processing of dainty or subjected to vacuum deep drawing packaging. |
