PRODUCTION OF CARIOSTATIC SUBSTANCE AND USE THEREOF

PURPOSE:To obtain a cariostatic substance having extremely enhanced inhibitory action on glucosyltransferase, by heat-treating an extract prepared by extracting tea leaves with a solvent. CONSTITUTION:Tea leaves are extracted with 2-100 times as much as a solvent (preferably water or a mixture of water and ethanol) by weight, the prepared extracted solution is heat-treated preferably at 90-100 deg.C for 30 minutes to 6 hours. Both unfermented tea and fermented tea can be used as the tea leaves.
