PURPOSE:To produce a fat metabolism improving substance of a specific component consisting essentially of beta-glucan by removing protein from an extracted solution with an alkaline aqueous solution from grain, desalting and drying. CONSTITUTION:The whole grain flour or polished flour of preferably oat or barley is extracted with an alkali aqueous solution under heating. The residue is removed from the extracted solution, adjusted with an aqueous solution of an inorganic aid or organic acid to proper pH to precipitate protein. The protein is removed from the solution by centrifugal separation, etc., and the residue is concentrated. Then an alcohol is added to the concentrated solution and prepared precipitate is collected. The precipitate is washed preferably with ethanol several times, dried and ground to give a gum substance of grain effective for improving fat metabolism consisting essentially of beta-glucan. The concentrated solution is desalted by ultrafiltration having tens of thousands fractionated molecular weight, electrophoresis or ion exchange resin, dried and ground to produce the gum substance of grain. |
