A starch-degradation-sugar composition, suitable for use in prepn. of foods, confectionary, pastries etc., with low viscosity and hydroscopicity and sweetness, was prepd. from starch by hydrolyzing with Streptomyces species amylase having degradation degree maltose 75%, the production ratio 0.06 below of glucose: maltose, at pH 4.5-5.0.
