PURPOSE:To continuously and rapidly obtain a tea drink free from clouding by treating an extracted solution of tea leaf with tannase at a specific pH, passing the treated solution through a filter membrane and successively carrying out filtration treatment to decompose tannin. CONSTITUTION:An extracted solution of tea leaf is treated with tannase at pH4.5-6.0, the prepared solution treated with tannase is passed through a filter membrane having 20,000-200,000 fractional molecular weight and filtration treatment is continuously carried out to give the objective tea drink. |
