PURPOSE:To prepare salted cod roe having excellent taste in increased yield by extracting the ovarium such as overripe roe from walleye pollack, selecting and washing the roe, immersing in a specific amount of wine, boiling in the wine, adding specific amounts of butter and table salt to the roe and stirring the mixture. CONSTITUTION:The yield of salted cod roe is increased by extracting the ovarium such as overripe roe from walleye pollack, selecting and washing the roe, immersing in 10-30wt.% of wine for 1-30hr, boiling in the wine for 1-5hr while adding 0.5-5wt.% of butter and 0.3-2.5wt.% of table salt to the roe and stirring the mixture. |
