PURPOSE:To make it possible to prepare a granular instant soup, etc. having good dispersibility and solubility, by using a molten edible solid fat without using a binder containing water. CONSTITUTION:Starch, e.g. corn starch, or a starchy material is mixed with an edbile solid fat, e.g. coconut oil or soybean oil, and if necessary a dispersing agent is then added to the resultant mixture. The mixture is then sprayed with a molten edible solid fat while being transferred, and then granulated. Thus, the food exhibits improved dispersibility as follows: Hot water added to the food reaches the surface of the starchy particles to dissolve the solid fat connecting the starch particles before the swelling of the starchy particles to disintegrate and then swell the starchy particles. |
