PURPOSE:To prepare a meat paste product having the characteristic taste, flavor and palatability of edible mushroom and having high chewiness by mixing ground fish or cattle meat with blanched fruit body of edible mushroom, forming the mixture and heating the formed product. CONSTITUTION:Ground fish meat and/or cattle meat is mixed with blanched fruit body of an edible mushroom and the mixture is heated after forming to obtain the objective meat paste product. The meat to be used in the present process as ground meat may be various red or white fish meat or cattle meat such as beef, pork or chicken or their mixture. The meat is optionally exposed to water and dehydrated before use. The blanched fruit body of edible mushroom is preferably crushed or chopped before or during the mixing process according to the form or use of the prepared meat paste product and it is also preferable to crush or chop the fish meat and/or the cattle meat and adding the chopped meat. |
