JELLY-CONTAINING DRINK AND PREPARATION OF JELLY

PURPOSE:To obtain the subject drink having improved heat-resistance, acid resistance and palatability by forming a low-methoxylpectin jelly to fibrous form and compounding the fibrous jelly to a drink. CONSTITUTION:A fibrous low-methoxylpectin jelly having a diameter of 0.5-2mm and a length of 1.0-5.0cm is prepared by dropping an aqueous solution containing a low methoxylpectin having an esterification degree of 20-50% and 0.1-0.8wt.% of gelan gum (the sum of the pectin and the gum is 1.6-3.1wt.%) into an aqueous solution of a calcium salt (e.g. CaCl2) having a concentration of >=0.2wt.% under agitation. The jelly is added to a drink in an amount of 1.0-30.0wt.%.
