PURPOSE:To prepare the subject clear soup, etc., without generating turbidity, having a low salt concentration and useful as a retort food by preliminarily heating YUBA (a kind of bean curd) in a saline aqueous solution, adding the treated YUBA to a clean soup, etc., and subsequently sterilizing the mixture. CONSTITUTION:YUBA is preliminarily heated in a saline aqueous solution preferably at 70-90 deg.C for 1-3hrs., added to a clear soup or a soup and subsequently sterilized to provide the objective clear soup or soup as a retort food. |
