In a process for treating meat to achieve a longer storage life and to achieve better consistency in the subsequent preparation, the meat, together with a brine possibly containing spices and salt, in particular meat juice, is subjected to a shaking motion in a closed container, the amount of the brine being 10 to 20% by weight of the amount of meat.
