In order to insure good colour retention of tinned onions, onion pastes, and onion extracts, onions are washed, damaged and soft pts. are removed and following solns. are added. 152.5l of dil aq. hydrogen-peroxide soln., and stepwise a mixt. of 0.4 kgs. of a 15% MgSO4 aq. soln. and 0.1 kg of a 5% cobalt-chloride soln. under constant agitation. Finally above mixt. is allowed to stand at 10-20 deg. C for 7-10 hrs. with occasional agitation
