A potato (19) is sealed into a pack (18) formed from sheet material so as to enclose atmospheric air or a comparable oxygen-containing gas. The sheet material is impermeable to the gas or semi-permeable to oxygen. The initial oxygen volume is between 4 % and 12 % of the volume of the potato. This control of the atmosphere within the pack ensures that the rate at which greening or sprouting occurs is kept low and in addition the creation of conditions which might lead to rapid decay are avoided. |
