A process for producing skim milk powder containing galacto-oligosaccharide, comprising adding beta -galactosidase to concentrated milk prepared by concentrating skim milk, to give rise to an enzymatic reaction; heating the reaction mixture to 70-85C to terminate the enzymatic reaction; and spray-drying the resulting reaction mixture, and skim milk powder containing galacto-oligosaccharide in an amount of 5% by weight or more.
