Process for preparing microcapsules comprising a flavourant embedded in a matrix material comprising spraying an aqueous emulsion, suspension or solution of the flavourant and the matrix material under the supply of air having a temperature of 50-120 DEG C while simultaneously introducing a spraying agent, and subsequently treating the sprayed product in a fluidized bed at a temperature of 0-120 DEG C to form a free-flowing product.
