PURPOSE:To efficiently produce D-sorbose by bringing a specific bacterium belonging to the genus Pseudomonas into contact with an aqueous solution containing a glucide selected from D-galactitol and D-tagatose. CONSTITUTION:A bacterium belonging to the genus Pseudomonas, capable of producing D-sorbose from a glucide selected from D-galactitol and D-tagatose is cultured in a nutritive medium containing the glucide selected from D- galactitol under an aerobic condition preferably by aerated spinner culture, D-sorbose is formed and accumulated in a culture solution. Then the culture solution is subjected to a means such as filtration to give an aqueous solution of D-sorbose, which is purified by removing protein and a means such as decoloring through adsorption with active carbon and concentrated to give syrupy D-sorbose. |
