摘要 A fermentation prod. with reduced ethanol content is prepd. from fruit juices or other substrates contg. sugars, by (a) treating part of the substrate, contg. 5-30wt.% of fermentable sugars, with 0.01-5wt.% of yeast (calc. as dry matter), and opt. with assimilable N and P cpds., and with 0.1-2 vols. of air/vol. of substrate/min., or the equiv. amt. of O2, until the ethanol content of the substrate is 1-10 vol.%, and (b) adding the 2nd part of the substrate with continued gassing with air or O2.
