A sugar-based prod. for the rapid prepn. of household jams with a much lower sugar content than the usual jams and equal keeping qualities, with at least 95 wt.% of saccharose, and additives, gelling agents, antioxidants and preservatives, typically pectin, citric acid and K sorbate, is a macroscopic uniform mixt. of 2 granulated phases: (a) a 1st phase, forming 75-80 wt.% of the mixt. and consisting of pure saccharose crystals of almost uniform size, and (b) a 2nd phase consisting of grains of uniform compsn. of a mixt. of the additives with saccharose, in powder form, with the granulometry of the 2nd phase corresp. to that of the 1st phase. ADVANTAGE - Calorie-reduced jams can be made. The mixt. has a uniform compsn. |
