PURPOSE:To obtain a frozen prawn resistant to breakage by putting a prawn into a water-impermeable bag directing the belly part downward, pouring cold water to the upper half part of the prawn until the belly part of the prawn is immersed in water and quickly freezing the prawn directing the opening of the bag upward to form an ice film on the exposed upper part of the prawn. CONSTITUTION:A prawn 1 is put into a water-impermeable bag 4 directing the belly part downward, cold water is poured into the bag while wetting the upper half part of the prawn 1 until the belly part is immersed in water, the bag 4 is placed in a refrigeration case 7 directing the opening of the bag 4 upward and the content is quickly frozen by immersing the bag 4 in a refrigerant liquid 8 stored in a refrigerant tank 9 in such a manner as to immerse the whole body of the prawn 1 and expose the opening of the bag 4 above the liquid surface. The objective frozen prawn prepared by this process is embedded in ice 5 at the belly part and below and covered with an ice film 6 on the upper half of the body exposed from the ice 5. |
