发明名称 FLOUR COMPOSITION FOR FRIED FOOD
摘要 PURPOSE:To provide the title composition capable of giving juicy, fresh taste with the water contained in ingredients retained and also of giving fried food with soft and favorable mouth feeling of the coating, containing a specified amount of carrageenan. CONSTITUTION:The objective composition containing, as the chief component, 1-20wt.% of carrageenan consisting of lambda-carrageenan, icarrageenan or k- carrageenan. As components other than the above carrageenan, powder such as wheat flour and a variety of starches which have been traditionally used as the main components, and, where appropriate, flavor, swelling agent, fatty oil, etc., may be used. The present composition is applied, through sprinkling, on the surface of ingredients such as fish and shellfish to be used for frying, as a pretreatment prior to coating.
