PURPOSE:To obtain roast salt (sodium chloride) which can maintain its dry and smooth state for a long time and has good taste by roasting salt containing Mg by a specified amt. or more in a specified temp. range. CONSTITUTION:Such a salt comprising MgCl2.6H2O, Mg(OH)2, etc., containing Mg by >0.05wt.% and preferably 0.1-1.0wt.% is roasted at 500-700 deg.C. The roasting period is preferably 10-30 minutes. By roasting, MgCl2.6H2O depositing on the salt of contained in the salt is mostly changed into MgO in a coating state on the surface of the salt. With this MgO coating, moisture absorption of the salt is significantly reduce, and the obtd. salt maintains this state and smooth powdery stage for a long time. |
