PURPOSE:To obtain a rose type seedle by adding pectinase to fruit juice obtained by squeezing fruit of apple from which red pigment therein is extracted to carry out enzymatic treatment, adding a yeast thereto, fermenting the apple in specific conditions and subjecting the fermented apple to clearing treatment. CONSTITUTION:0.01-0.025wt.% sulfurous acid (e.g. potassium metabisulfite) (based on crashed apple fruit) and, as necessary, an acid (malic acid) are added to crushed apple fruit and concentration of malic acid is controlled to >=2g/l and the treated apple is allowed to stand at 0-50 deg.C for 1-24hr to extract red pigment therein and then squeezed to provide fruit juice. Then, pectinase is added to the fruit juice and the fruit juice is subjected to enzymatic treatment and then subjected to solid-liquid separation to provide the cleared juice. Then, a yeast (e.g. Saccharide cerevisiae) is added to the cleared juice and fermentation is started at 0-15 deg.C. Then the fermentation is stopped at the maximum point of red concentration in <1% alcoholic content and the fermented juice is subjected to solid-liquid separation to clear the fermented juice. |
