PURPOSE:To provide the title system intended to improve mouth feeling and reconstitution with hot water, so designed that, at a point when the water content of convenience noodle in a cup came to a specified level, an air jet is applied upward through the bottom of the cup to effect the increased voids among noodle ribbons. CONSTITUTION:A noodle ball 4 containing much water which has been subjected to steaming treatment is put into a cup 3 and carried into a dryer 1. At a point when the water content of the noodle ball 4 came to 20-55wt.%, an air jet at a temperature equal to the drying temperature is radially applied upward via a suction pipe 5, a compressor 7, an output pipe 6, and the nozzle 10 of a hot-air injection equipment 2 through the bottom of the cup 3 to make the noodle in the cup 3 float and develop voids among noodle ribbons, followed by drying until the water content of the noodle comes to 10-20wt.%. |
