The invention relates to a process for obtaining plant extracts which are characterised by anti-free-radical and anti-malonaldehyde properties. Such extracts, which are free-radical-trapping agents, are obtained by the choice of plant, the choice of solvent and of extraction technique and the capacity for partially trapping malonaldehyde. Measurements of the anti-free-radical and anti-malonaldehyde protective value are carried out using emulsions containing highly unsaturated lipids, which are sensitive to oxidative processes of chemical and enzymatic origin, into which emulsions the extracts are introduced. The protective activity is determined by assaying peroxides and malonaldehyde compared with a control emulsion containing no extract.
