PURPOSE:To obtain the subject compound useful as a perfume and synthetic raw material from an alkanone or alkanoic acid according to a fermentation method by using a specific mold belonging to the genus Fusarium, Penicillium, etc. CONSTITUTION:A microorganism, belonging to the genus Fusarium, Penicillium, Aspergillus, Trichoderma or Cladosporium and having the ability to convert an alkanone expressed by formula I (R1 is >=5C alkyl; R is methyl, ethyl, etc.) into a hydroxyalkanone expressed by formula II (R3 is R1 in which the carbon at the 2-tc 5-position from the omega-position is hydroxylated) and/or an alkanoic acid expressed by formula III (R2 is R1), ester or salt thereof into a hydroxyalkanone expressed by formula IV (R4 is R2 in which the carbon at the 2- to 5-position from the omega-position is hydroxylated) is cultured in a culture medium containing the compound expressed by formula I or III to extracellulary produce the objective compound expressed by formula II or IV. |
